Independent Working Cook I
New Tandoor is looking for an independently working cook (“Zelfstandig Werkend Kok I”). We are an Indian restaurant (Tandoori restaurant) that has been established in the city center of Gouda since 1991. As an independent working cook, your main responsibilities include preparing, cooking and presenting Indian dishes. You will also manage inventory and ordering, handle cleaning and organizing tasks, and propose improvements of optimization opportunities. In this role, you will have a culinary supervisor.


The job description and tasks include:
• Overseeing and preparing dishes
- Preparing and cooking dishes independently.
- Acquiring knowledge and experience of our existing recipes and preparation methods.
- Performing preparation tasks such as washing, cutting, marinating, mixing, pre-cooking and cooling. Assessing the quality, freshness and shelf life of ingredients to be used forms part of the preparation. This is done in accordance with food safety regulations (HACCP, etc.)
- Preparing dishes according to proper work planning. It is also important to perform interim quality controls (taste, color, consistency, etc.) and make adjustments/additional dosages when necessary.
- Work is carried out in accordance with regulations (HACCP, Occupational Health and Safety, etc.)

• Inventory and order management
- Regarding inventory and order management, it is important to receive, check and store ordered items. It is essential to monitor and register the shelf life and hygiene of the inventory.
- Planning daily work activities, having sufficient inventory, storing inventory in the correct manner and using inventory according to the FIFO principle.

• Cleaning and tidying tasks
- Ensuring a clean and organized work environment, including proper maintenance of kitchen equipment and tools.

• Improvement proposals and optimization
- The quantities of ingredients and semi-finished products used, are checked and justified.
- Contributions are provided for the menu, work instructions etc. Modifications to recipes are discussed and updated in recipe instructions.

Job Requirements

Your Profile (knowledge and skills)
- MBO level 3 work and thinking level;
- Demonstrable knowledge of basic cooking techniques;
- Knowledge of products/ingredients and (the composition of) the menu;
- Command of the Dutch or English language.
